Fan's Restaurant is the only restaurant in Nova Scotia that specializes in Peking Cuisine. Peking Cuisine originates
in Peking (Beijing), the capital of China. Peking Cuisine refers to dishes prepared for the Emperor and his Court
in the old days. Dishes were of a wide variety, ranging from seafood, exotic game, meat and poultry to vegetarian.
Specialized food preparation methods were developed by master chefs recruited from all over China, bringing
with them refined regional cooking and food knowledge. Although these specialized food preparation methods
have been simplified over time, the essence remains: freshest possible ingredients, careful preparation,
beautifully presented and flavourful dishes. Peter Mang, owner and Head Chef, with over 30 years experience,
